Amazing Fruit Oatmeal Cookies

Cranberry, Apricot, Tangerine, Chocolate Chip, Oatmeal Cookies
modified from this recipe which has adjustments if you have elevation issues when baking:

1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt, fine
1 teaspoon cinnamon, ground
2 sticks (8 ounces, 1/2 pound) butter, unsalted, room temperature
1 cup white sugar
1/2 cup light brown sugar, packed (an additional 1/2 to 1 cup of l.b. sugar for rolling)
2 eggs, large, room temperature
1 teaspoon vanilla
1 tablespoon tangerine juice (or orange juice)
3 cups old fashioned rolled oats
3/4 cup cranberries, dried
1/2 cup apricots, dried, diced
1/2 cup chocolate chips, semi-sweet
1 teaspoon lemon zest
1 teaspoon tangerine zest (or orange zest)

1. Preheat oven to 350°F

2. Measure out the flour, baking soda, salt, and cinnamon in a medium bowl and stir to mix

3. In a stand mixer or with a hand held mixer, cream the butter with the light brown sugar and white sugar

4. Add in each egg, one at a time and mix to incorporate. Add the vanilla and tangerine juice. Mix

5. Add in the flour mixture in 2 to 3 batches, incorporating each time. Don’t mix at too high of a speed or you’ll be wearing most of the flour

6. Take the bowl out from your stand mixer (or remove the whisking blades) and fold in the cranberries, chocolate chips, zests, and apricot bits

7. Use a teaspoon measuring spoon to make drop cookies and roll them in the additional light brown sugar

8. Cook cookies for 10-15 minutes (mine averaged 12-13 minutes until golden brown)
