White Chocolate Chip Macadamia Cookies

My boyfriend’s mother adores white chocolate and happens to have a macadamia nut tree right in the backyard.  If you ever wondered why perfect, round, white macadamia’s are so darned expensive, you don’t know the effort it takes to get one out of it’s double shell intact!  These need to be husked (the green layer) and then shelled (the smooth, slippery, brown layer).

These cookies are not made with fresh macadamias…alas, the tree is not currently bearing any, or I would put a picture here.  I am not particularly enamored with white chocolate, nor how these cookies were puffy and happy looking in the oven, but quickly deflated when set out to cool.  But they were eagerly snatched up and enjoyed, and that is the sign of a good cookie.

White Chocolate Chip Macadamia Nut Cookies
Based On This Recipe — Makes a ton of cookies — like 50-60!  Although, mine sunk 😦

1 cup butter, softened
1 cup granulated sugar
3/4 cup light brown sugar, packed
2 teaspoons vanilla
1/2 teaspoon salt
2 eggs
2 1/2 cups all purpose flour
1 teaspoons baking soda
11 oz (1 bag) white chocolate chips (approximately 1.25 cups)
1 cup macadamia nuts, chopped into chunks

1.  Oven to 375 F



2.  Cream butter, granulated sugar, brown sugar, vanilla, and salt

3.  Add eggs, one at a time, and mix between each

4.  Sift flour and baking soda and add to batter in 3 stages

5.  Remove whisks and use a spatula to stir in the white chocolate chips and macadamia nuts

6.  Use a tablespoon to drop onto a cookie sheet, bake for 8-10 minutes until golden
