Double Vanilla Cupcakes: The Only Buttercream Icing I Enjoy

I’m usually very picky with buttercream, but this recipe is simple and delicious.  Like the Double Vanilla Cupcakes, this buttercream is also adapted from the recipe posted on Elise’s SimplyRecipes blog by guest blogger Garrett McCord of Vanilla Garlic.  I don’t really know anything more to add or to say, try it!

Vanilla Buttercream Icing

Vanilla Buttercream Icing

Beat the butter and slowly add in the confectioner’s sugar until peaks form.  Add in one of the optional mix-ins and sprinkle something on top.

1/2 cup butter, unsalted, room temperature
1 1/4 cups confectioner’s sugar (powdered)
Optionals:
1 teaspoon vanilla extract
1 teaspoon lemon zest, lime zest, orange zest
1/2 pod vanilla bean seeds
1 teaspoon orange juice, passionfruit juice,  cranberry juice
1 teaspoon almond extract
1/2 cup white chocolate chips
