The Panepe Flop: The Failed Banana Spiced Pancake

I love banana pancakes.   I found a recipe online that warned that they would be thick, not to over-beat (or they’d turn rubbery), and don’t add the banana bitsuntil after it’s in the pan.  I didn’t listen to any of these warnings.  I added a little bit more milk, a dash of sour cream, some extra spices, the banana chunks, and beat away.   Making little pancakes failed.  They were too doughy.  I added more sour cream and milk and poured the rest of the batter into the pan.  What resulted was the odd love-child of a pancake and crepe.  Thin, yet still doughy, with a smooth golden brown texture, the “Panepe” was actually pretty delicious.  I shmeared on some sour cream, rolled it into a log and dusted with confectioner’s sugar and cinnamon.

Anyway, there weren’t any leftovers.  I never see the failures on Food Blogs – only shining successes.  Just thought someone out there would smile looking at the Panepe.
