Valentine’s Idea: Heart-shaped Beets in Yogurt

Whether snack or breakfast in bed, pink yogurt will be delicious and festive for your significant other (or yourself).  After having a variation of this dish in NYC (Beets, Roasted Potatoes, Greek Yogurt, Honey, and Walnuts), I offer the following to put a smile on anyone’s face:

Two beet hearts together on a bed of 2/3 yogurt, 1/3 sour cream (no cup measurement because this can be scaled to as much or as little as you like), a drizzle of honey, and a sprinkling of walnuts.  These beets were cut with cookie cutters out of canned beets approximately 1/4″ thick.

By the end of the meal, the yogurt-sour cream mixture has turned a deep pink.  If you want to start off with pink cream, just add a few drops of the beet juice to the yogurt and sour cream in a separate bowl until you have the desired color and spoon into the serving bowl.  Note: Once you add the beets on top the color will darken as the juices mix in with every spoonful!

I wonder if this would be a good way to introduce your picky child to beets – cut into fun shapes and drizzle lightly with honey (please do not give honey of any form to very young children – it could have drastic consequences).
